Pinot Noir:

(pee noh nwahr)—A tricky grape to grow, Pinot Noir makes some of the best wines in the world. The prototype wine is red Burgundy from France but Oregon, California, New Zealand, and parts of Australia also produce good Pinot Noir. The wine is lighter in color than Cabernet or Merlot with relatively high alcohol, medium-to-high acidity, and medium-to-low tannin. Its flavors and aromas can be very fruity or earthy and woodsy, depending on how it is grown. It is rarely blended with other grapes.

3 lbs ripe tomatoes, peeled, seeded and chopped
2 cucumbers, peeled, seeded, and chopped
1/2 cup finely chopped green pepper
1/2 cup finely chopped onion
1 garlic clove, peeled and very finely chopped
2 cups chilled tomato juice
1/3 cup olive oil
3 tbsp vinegar
salt
black pepper
1/4 tsp Tabasco
6 cubes frozen tomato juice
Tiny croutonof white bread (1/4 inch square), browned in olive oil

Preparation

Simply put all the ingredients (except for garnishes) in a large bowl, blend well, and season to taste.

Chill thoroughly. Serve in bowls with a frozen tomato juice cube and a sprinkling of croutons.
